On the way, we take time to get to know the surroundings, talking to the shepherd about transhumance and his work, the native plants that feed the sheep (and give the milk its flavour), observe the landscapes and listen to the birdsong and the bells playing in the wind.
After our walk we can have a beirão snack, packed full of mountain produce. This will prepare us for our arrival at the dairy, where we will learn, through the voice of experienced cheesemakers, about the whole process of artisanal cheese production, accompanied by a tasting.
